What would the process be (in detail) to acclimimate a cold water lobster, such as the kind Wal-mart sells, to a home aquarium wihout running a chiller?
Ive had 4 years experience with saltwater tanks, but would like to know the feasibility of a large coldwater lobster

Well for fish you just let the bag sit in the water until the temperature is the same. Then you fill the bag with treated tap water. Next you Pour half of that water out. Repeat the tap water procedure. Then use your net and get the fish out. I'm assuming it's the same for Lobsters, try it.

The acclimation process would be identical to any fish or invert you’ve acclimated in the past. Hopefully, you’d drip acclimate it, rather than mess around with bags and cups and floating, as this is much safer. However, the chances of you being able to keep that lobster alive and healthy for any period of time are low. The lobsters sold as food get huge– more than a food long and several pounds in weight. Unless you have a 6+ foot long tank on hand, I really wouldn’t suggest it for any period of time. There’s also the problem of temperature. These lobsters NEED coldwater to survive. By keeping them at room temperature, especially in July, you’re just asking for trouble.
If you want the look of a lobster, I’d really suggest you just go ahead and setup a 10 gallon freshwater tank with a crayfish.
